Asparagus and Ham Crêpes
1 packet 'Signature range' plain pancakes (available at Countdown and Woolworths)
1 tin asparagus spears (drained)
100g shaved ham
White sauce (quite thick)
Grated cheese.
Method:
Preheat oven to 200c
Remove the pancakes from the packet. Place flat on a baking tray.
Make the white sauce; add a handful of grated cheese, the shaved ham and the drained asparagus
Spread each pancake with a generous spoonful of the sauce mixture. Roll the pancake over the mixture; ensure that the pancake "join" is on the base of the tray. Spread grated cheese on top of each pancake.
Place the tray in the oven; remove when the cheese is melted in the top of each pancake.
Serve alone for a light meal or with a green salad and garlic bread for dinner.
